Mason Jar Salad with Grilled Chicken and Balsamic Vinaigrette
Ingredients:
- 2 cups cooked and diced grilled chicken
- 1 cup cherry tomatoes, halved
- 1 cup diced cucumbers
- 1 cup diced bell peppers (assorted colors)
- 1 cup shredded carrots
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh basil
- 1/4 cup balsamic vinaigrette dressing
- 4 wide-mouth quart-sized mason jars
Instructions:
- Prepare all the ingredients by grilling and dicing the chicken, chopping the vegetables, and preparing the dressing.
- Start assembling the mason jar salads: Begin with the dressing at the bottom of each jar. This helps to keep the greens from getting soggy.
- Layer the ingredients in the following order: diced chicken, cherry tomatoes, cucumbers, bell peppers, shredded carrots, crumbled feta cheese, chopped red onion, and chopped fresh basil.
- Top each jar with a generous amount of mixed salad greens, packing them down slightly to fit.
- Seal the mason jars tightly with their lids.
- Store the mason jar salads in the refrigerator until you're ready to enjoy them.
- When you're ready to eat, simply shake the jar to mix the dressing with the ingredients. Then pour the contents into a bowl or eat directly from the jar.
